Ingredients
- 350 g water
- 12 g cassia bark
- 12 g Ceylon cinnamon
- 1.5 g allspice
- 2.5 g vanilla bean
- 150 g unsalted butter
- 150 g salted butter
- 2.7 g gum arabic
- 0.4 g xanthan gum
- 300 g acacia honey
- 18 g raw cane sugar
- 16 g pimento bitters
Method
- 1Simmer the water with the cassia, cinnamon and allspice, then steep the vanilla off the heat. Strain, blend in the gums, emulsify into the melted butters, then blend in the rest. Strain. Warm before using.
