Ingredients

• 16 oz milk
• 3 oz demerara sugar
• 0.33 cup masa harina
• 2.5 oz white chocolate
• 4 cinnamon sticks
• 2 star anise
• 1 tsp salt

Method

1. 1Bring everything to a low simmer over low heat without scalding the milk, whisking every minute or two for eight minutes. Cool and coarse-strain out the spices, keeping some flecks and chocolate fat.
