Ingredients
- 1000 g lemon juice
- 100 g water
- 2.5 g agar-agar powder
Method
- 1Boil the water and whisk in the agar for one minute. Off the heat, whisk in the juice for one minute. Chill in a shallow pan over an ice bath until it sets to a loose gel, then strain through cheesecloth or a coffee filter for four to six hours.
