Ingredients
- 1 liter pineapple juice
- 3 ml Pectinex
- 6 ml kieselsol (in two additions)
- 3 ml chitosan
- White sugar, equal to the clarified juice by weight
- Lime acid, the clarified volume divided by 2.5
Method
- 1Blend the juice, Pectinex and half the kieselsol for five minutes and rest fifteen. Add the chitosan, blend briefly, rest fifteen; add the rest of the kieselsol, pulse and rest fifteen. Spin in a centrifuge. Weigh, blend in an equal weight of sugar, then add the lime acid.
