Ingredients
- 1 cup water
- 1 Roma tomato, cubed
- 1 dried pasilla chile
- 1 dried guajillo chile
- 1 dried ancho chile
- 1 can fire-roasted corn
- Demerara sugar, equal to the strained liquid by weight
Method
- 1Simmer the water, tomato and chiles until soft. Blend with the corn until smooth and strain. Weigh the liquid and blend in an equal weight of demerara until dissolved.
